I felt like trying something different! No sooner said than done. That’s how these juicy, crunchy-on-the-outside beef and chickpea patties in a sesame seed crust were born.
What makes these patties special?
Sesame Seed Crust: I used sesame seeds instead of breadcrumbs. They are a much healthier choice! Why? Breadcrumbs contain gluten, which can cause digestive and health issues for many without them even knowing it, and they offer little nutritional value. Sesame seeds, however, are packed with essential minerals and healthy fats (the kind that don’t make you gain weight!). Plus, they give the patties a delightful crunch.
Veggie-Rich: I’ve reduced the animal-based portion and increased the plant-based ingredients by adding plenty of puréed chickpeas and onions. Why is this good? We often tend to eat more animal products than necessary. In my work as a nutrition counselor, I see how few vegetables people actually consume—far less than the body truly needs. These patties are a great way to boost the plant-based share of your menu. You can barely taste the chickpeas! The nutty flavor of the sesame seeds is what really shines.
100% Gluten-Free
My Recommendations:
Use organic grass-fed beef whenever possible.
Use olive oil for frying and cook on low heat (it takes a bit longer). It’s important to golden-brown the patties gently—don’t let them burn!
Here is the translation into English. I have used standard culinary terms to make it sound professional and easy to follow for an English-speaking audience.
Ingredients
300 g organic beef mince (or a 50/50 beef/pork mix)
300 g cooked chickpeas
1 egg
1 large onion (or 2 small ones)
5 tbsp gluten-free flour blend (any variety will do)
1–2 cloves of garlic
3 tbsp nutritional yeast (optional, for extra flavor)
1 tsp paprika powder
1 tsp onion powder
Salt and pepper (to taste)
Sesame seeds (for coating)
Instructions
Blend: Place the cooked chickpeas, onion, and garlic in a blender or food processor and pulse until smooth.
Mix: Transfer the mixture to a bowl. Add the minced meat, egg, spices, and flour. Mix thoroughly by hand until well combined.
Shape & Coat: Form the mixture into patties and press both sides into the sesame seeds until evenly coated.
Fry: Heat some oil in a pan and fry the patties on low heat on both sides until golden brown and cooked through.
