Super easy-to-make granola recipe for peanut butter lovers
This is one of the best granola that I have made. Probably because of the peanut butter and high nut content :). It is gluten-free, dairy-free, vegan, has no white sugar in it and is protein rich due to high nut and seeds content.
Tip:
Always prefer granola with lower sugar and higher protein and healthy fats (nuts and seeds) content to help to avoid blood sugar spike which is caused by granolas with high carbohydrate contant. This is good for the overall health and for weight management. Also – nuts and seeds have high vitamin and mineral content.
What you need:
small oven pan, sheet of baking paper, big bowl, spoon for mixing. A working oven too, of course :).
Ingredients:
200 g (7 oz or 1.5 cups) rolled (gluten-free) oats
130 g (4.5 oz or almost 1 cup) cashew nuts *You can replace the cashew nuts with pecans (my favourites!)
50 g (2 oz) seed mix or pumpkin seeds
50 g (2 oz) shredded coconut
3 tblsp unsweetened peanut butter
5 tblsp honey or maple syrup (you can put half and half if you wish)
0,5 tsp salt
Bake 20 minutes 165 degrees.
After baking let it cool completely, and then break it into crunchy chunks with your fingers :). Enjoy with youghurt, date or maple syrup and berries.
You can store the remaining granola in an air proof jar.
